Yes. That’s right.   Tomatoes are acid.  Some of them, especially if they are not ripe enough, are very acid.  If you want to prepare a delicious tomate sauce, that excess of acidity may ruin the final outcome of your hard work in the kitchen.  The easiest way to prevent this from happening is using sugar.  It will definitely make it tastier and easier to use in most of your meals. That’s why sugar is part of tomato sauces.  Ketchup itself is another recipe. It has to reach a balance between the sweetness of sugar and the acidity of vinegar.  I am not very keen on ketchup myself but I must admit that sauce has worked miracles conquering the world the way it has.  So now you know. Tomato sauce and sugar are welded together.
